Jeff Saturday was born in Atlanta, Georgia. In 1993, he graduated from Shamrock High School in Decatur, Georgia. In a 2012 Sports Illustrated article, his high school coach Ron Gartrell stated on Saturday, “Jeff was in back for 80% of our offence.

Teams ran away from Jeff, so on defence, we put Jeff on one side and all our other good players on the other.”

However, Gartrell was unable to persuade Southeastern Conference coaches of Saturday’s abilities; in the same interview, he stated that coaches at Georgia and Tennessee thought Saturday was too short to compete in the conference.

Gartrell received a scholarship offer from the University of North Carolina in part due to his friendship with then-defensive coordinator Carl Torbush.

Saturday received an athletic scholarship to attend the University of North Carolina at Chapel Hill, where he was a four-year letterman for coach Mack Brown’s North Carolina Tar Heels football team from 1994 to 1997. He served as a Tar Heel team captain as a junior in 1996 and again as a senior in 1997.

He was a first-team All-Atlantic Coast Conference (ACC) selection at the centre in 1996 and 1997, as well as an Academic All-ACC selection in 1997.

Later, Saturday’s defensive tackle roommate from college, Nate Hobgood-Chittick, who would go on to play four seasons in the NFL, said, “On the practice field, Jeff kicked our asses everywhere. I could count on one hand how many times I defeated him in a one-on-one exercise, and whenever it happened, I rejoiced.”
