According to Rolling Stone, Parker founded Low in the year 1993 in Duluth together with her husband, Alan Sparhawk. Mimi Parker was the vocalist as well as the drummer of the Low music band.

Low’s debut album was released in the year 1994 and was titled I Can Live in Hope. Other works by Low include Little Drummer Boy, Drums and Guns, and many others.

In December 2020, Mimi Parker was diagnosed with ovarian cancer. According to sources, Parker began with treatment in 2021. Parker battled ovarian cancer until her death.

Mimi Parker died on November 6, 2022, at either age of 54 or 55. The news of her death was announced by Allan Sparhawk on the official Twitter page of Low. Parker was survived by her husband, Sparhawk, and child, Hollis Parker.
