Granite is naturally generated in the Overworld in large blobs. The game will attempt to generate granite twice per chunk in blobs of up to 862 individual blocks. Granite can replace other blocks such as stone, diorite, andesite, tuff, and deepslate when generated. Naturally generated granite can be picked up by the player when broken by a pickaxe, and when mined without a pickaxe, nothing will drop.
