Italian pizza expert Franco Pepe is a modern artist who has a lifelong passion for food. He indulges in this lifelong interest in Caiazzo, a community approximately an hour northeast of Naples, where he owns the eatery Pepe in Grani.
Franco hails from a long history of accomplished bakers; he has spent countless hours watching and learning from his grandfather, father, brothers Antonio, and Massimiliano. He has learned a lot of other things from these expert bakers as well.

Scales were never used, no formulas or recipes were ever taught, and nothing was ever recorded. Franco observes this standard approach and then employs a flexible approach at Pepe in Grani.
