Joe Gibbs was born in Mocksville, North Carolina, the eldest son of Jackson Ceufud (1916-1989) and Winnie Era (Blalock) Gibbs (1915–2000). Gibbs graduated from Santa Fe High School as the star quarterback in 1959. Gibbs attended Cerritos Junior College before transferring to San Diego State University (SDSU), where he was coached by Don Coryell. Gibbs received his bachelor’s degree in 1964 and his master’s degree in 1966 from SDSU.
Gibbs began his career as an offensive line coach at San Diego State under Coryell (1964–1966). Joe Gibbs held the same position under Bill Peterson at Florida State (1967-1968), then under John McKay at Southern California (1969-1970), and Frank Broyles at Arkansas (1971–1972). Gibbs then moved on to the National Football League, where he was hired by head coach Don Coryell as the offensive backfield coach for the St. Louis Cardinals (1973-1977). Gibbs rejoined Coryell with the San Diego Chargers after a season as offensive coordinator for the Tampa Bay Buccaneers (1978) under McKay (1979–1980).

In an emotional news conference on March 5, 1993, Gibbs resigned as Redskins head coach after 12 seasons, citing a desire to spend more time with his family. Richie Petitbon, his long-term assistant, succeeded him.
